Spicy Peanut Free Soba Noodles

This Japanese Soba noodles tossed in a spicy peanut free sauce makes a simple Asian side dish or easy main meal served hot or cold and on the table in 10 minutes or less.

Equipment

  • measuring cup
  • Whisk

Ingredients

  • 8-9 oz Soba noodles (cook according to the directions on the package)
  • 1 green onion, thinly sliced
  • 1 carrot, shredded
  • sesame seeds

Peanut Free Sauce

  • 1/2 cup 1/2 cup sunflower seed butter (optional substitute peanut or nut butter)
  • 4 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp fresh lime juice
  • 2 tbsp water
  • 2 tbsp rice wine vinegar
  • 1 tbsp freshly grated ginger
  • 1 tbsp garlic cloves, minced
  • 1 tbsp chili paste or flakes (optional)

Instructions

  • Add all ingredients together in large bowl and mix well. If sauce is too thick add in more water to create a more creamy texture.
  • Toss cooked Soba noodles into the sauce. Mix well and serve immediately or chilled. Top with sesame seeds, shredded carrots and green onions.
