2-3 cupsshredded rotisserie chicken
1yellow onionchopped
3carrotssliced
2celery stalkssliced
2tbspfresh dillchopped

1/2cupall purpose flour
1tbspbaking powder
3/4cupmilk
salt & pepper
Instructions
In a large Dutch oven or soup pot, heat olive oil over medium heat. Add butter, onion, carrots, and celery. Cook 5β7 minutes until softened.
Pour in the chicken broth and bring to a gentle boil. Add shredded rotisserie chicken, salt, pepper, and fresh dill. Reduce to a simmer and cook for 10β15 minutes to develop flavor.
In a medium bowl, whisk together flour, baking powder, milk, salt and pepper.
Bring soup to a low simmer. Drop spoonfuls of dumpling dough directly onto the simmering soup (about 1 tablespoon each). Cover tightly with a lid and cook for 12β15 minutes. Do not lift the lid while cooking.
Check that dumplings are cooked through (they should be fluffy and firm). Taste and adjust seasoning if needed. Serve warm with extra fresh dill on top.
