3cupskalestems removed & chopped
1headromaine lettucechopped
2grilled chicken breaststhinly sliced
1cancooked black beansdrained & rinsed
1cupcorn
1/4cupred onionchopped
2avocadoschopped
1/4cupcotija cheesecrumbled
4tbspcilantrochopped
1/4cuptortilla strips(save for topping)
Chipotle Lime Vinaigrette
1/2cupextra virgin olive oli
1/2tspapple cider vinegar
3chipotle peppers in adobe sauce
2tspadobe sauce
4tbspfresh lime juice(about two limes)
1/4tspcumin
1/4tspsalt
Instructions
Add kale, romaine lettuce, corn, black beans, red onion, cilantro, cojita cheese, chicken & avocado in a large serving bowl and mix well.
Chipotle Lime Vinaigrette
In food processor add chipotle peppers, adobe sauce, apple cider vinegar, olive oil, lime juice, cumin & salt. Puree mixture until dressing is well blended.
Dress the salad with the lime vinaigrette (less is always more) and top with the tortilla strips.
