8-9ozSoba noodles(cook according to the directions on the package)
1green onion, thinly sliced
1carrot, shredded
sesame seeds
Peanut Free Sauce
1/2cup1/2 cup sunflower seed butter (optional substitute peanut or nut butter)
4tbspsoy sauce
2tbspbrown sugar
2tbspfresh lime juice
2tbspwater
2tbsprice wine vinegar
1tbspfreshly grated ginger
1tbspgarlic cloves, minced
1tbspchili paste or flakes(optional)
Instructions
Add all ingredients together in large bowl and mix well. If sauce is too thick add in more water to create a more creamy texture.
Toss cooked Soba noodles into the sauce. Mix well and serve immediately or chilled. Top with sesame seeds, shredded carrots and green onions.
