This 5 ingredient, one pot soup recipe is the most comforting soup for the cold winter days. This soup is inspired by a classic Italian wedding soup with my spin on it. It's a super easy and quick recipe to make in a pinch. It’s spicy and has a creamy consistency from cooking the rice right in the soup.

Ingredients
5ozfresh spinach
1poundhot ground sausage
10cups (80 oz)chicken broth
1cuplong grain white rice
1medium yellow onion
1tbspolive oil
salt and pepper
red pepper flakesoptional
Instructions
Add olive oil and onions to a large soup pot and saute over medium-high heat for 2 minutes. Add in ground sausage and continue to saute for 3-4 minutes or until no longer pink. Drain the oil/fat from the pot using a strainer.
Bring the heat to low and return the sausage and onions mixture to the pot. Add in the broth and rice and simmer for 18-20 minutes or until rice is tender. Add in spinach and cook until wilted about 1-2 minutes. Season with salt and pepper. Serve with crackers, crusty bread and or top with crunchy croutons. *Optional top with red pepper flakes for extra spice.
