1/2cupsunflower seed butter(optional substitute peanut or any other nut butter)
4tbspsoy sauce
2 tbspbrown sugar
2tbspfresh lime juice
2tbspwater
1tbspfreshly grated ginger
1tbspgarlic cloves, minced
1tbspchili paste or flakes (optional)
2tbsprice wine vinegar
Instructions
Spicy Peanut Free Sauce
Add all ingredients into a large bowl & whisk together. Depending on sauce consistency add in more or less water to create a creamy smooth texture.
Bring large saucepan to a medium high heat. Add ground chicken and cook until browned, about 3-5 minutes, making sure to crumble the chicken as it cooks; drain excess fat.
In the same saucepan add back in ground chicken, onion, celery, mushrooms & water chestnuts. Cook over medium for additional 3-5 minutes. Add in the peanut free sauce and mix well.
To serve, spoon several tablespoons of the chicken mixture into the center of a lettuce leaf and garnish with red pepper slices, shredded cabbage & sesame seeds.
