These easy & healthy spicy peanut free chicken lettuce wraps are a delicious meal that satisfies. It’s a quick and simple meal to whip up any night. The sauce is nut-free for anyone who suffers from nut allergies, made with sunflower seed butter which has the same great nutty flavor similar to peanut butter but without the peanuts.

The homemade peanut free sauce is so quick and easy to make that you will never want to buy it pre-made again. The sauce is a great dipping sauce for spring rolls, chicken or even drizzle it over noodles for easy peanut noodles.

Ingredients

  • 1 lb ground chicken
  • 1 head romaine lettuce or bibb lettuce
  • 1 cup mushrooms, chopped
  • 2 celery stalks, chopped
  • 1 can water chestnuts, drained & chopped
  • 1/2 white onion, minced
  • 1/2 red pepper, thinly sliced
  • 1/2 cup red cabbage, shredded
  • Sesame seeds, for garnish

Spicy Peanut Free Sauce

  • 1/2 cup sunflower seed butter (optional substitute peanut or any other nut butter)
  • 4 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp fresh lime juice
  • 2 tbsp water
  • 1 tbsp freshly grated ginger 
  • 1 tbsp garlic cloves, minced
  • 1 tbsp chili paste or flakes (optional)
  • 2 tbsp rice wine vinegar

Instructions

Spicy Peanut Free Sauce

  • Add all ingredients into a large bowl & whisk together. Depending on sauce consistency add in more or less water to create a creamy smooth texture.

  • Bring large saucepan to a medium high heat. Add ground chicken and cook until browned, about 3-5 minutes, making sure to crumble the chicken as it cooks; drain excess fat.
  • In the same saucepan add back in ground chicken, onion, celery, mushrooms & water chestnuts. Cook over medium for additional 3-5 minutes. Add in the peanut free sauce and mix well. 
  • To serve, spoon several tablespoons of the chicken mixture into the center of a lettuce leaf and garnish with red pepper slices, shredded cabbage & sesame seeds.
