Easy Rotisserie Chicken Tacos Topped with a Radish Salsa
Looking for an impressive super easy and quick meal? Look no further! This super easy and quick taco dinner will be sure to win over whoever you make it for. The radish salsa and cotija cheese fancy up this simple dish making it look like it's takeout or from a restaurant. The radish salsa has the prettiest pink hue to it and gives your taco that nice crunch packed with zesty cilantro-lime flavor. The homemade taco seasoning is something you can just whip up with basic ingredients you already have in your pantry (no more seasoning packets)! I love to make a big batch to keep the seasoning on hand.

Ingredients
Homemade Taco Seasoning
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- 1/2 tsp onion powder
- 1/4 tsp ground cayenne red pepper
- 1/4 tsp salt
- 1/4 tsp pepper
Tacos
- 1 rotisserie chicken shredded
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 1/2 cup water
- taco seasoning
- 1/3 cup red onion chopped
- 12 flour torilla shells
- cotija cheese crumbled for topping
Radish Salsa
- 8 radishes thinly sliced
- 1/3 cup red onion minced
- 2 tbsp cilantro chopped
- 3 tbsp freshly squeezed lime juice
- 1 tsp Tajin seasoning
Instructions
Radish Salsa
- In a medium bowl add the radishes, lime juice, cilantro and red onion. Mix well and season with Tajin (optional).
Taco Seasoning
- Add in a glass container or jar chili powder, cumin, garlic, paprika, oregano, onion, cayenne red pepper and salt & pepper. Shake to mix well.
Tacos
- In a large saute pan add olive oil and ⅓ cup red onions cook over medium heat until softened, about 3-4 minutes. Add in the tomato paste, chicken, taco seasoning and water (add more if dry). Bring to a simmer and cook for 5 to 6 minutes or until mixture thickens.
- Heat up flour tortillas in the microwave for 15-30 seconds. Fill the tortillas with the chicken mixture and top with radish salsa and cotija cheese.
