Easy Homemade Vegetable Broth

Literally the easiest thing to make. All you need is water and veggies brought to a boil and then simmered for 1 hour, strain the veggies to remove them and there you have it homemade vegetable broth. You can use any veggies you have on hand even the peels or pieces you would normally throw away. Typically vegetable broth is made with carrots, onions and celery but feel free to add in any fresh herbs, onion peels, garlic, leeks, green onions, mushrooms, potatoes etc.

Couscous, Kale & Egg Soup

Literally this is my go-to dinner all the time! I seriously love soup and cook it a lot! It’s such a basic soup but don’t let that fool you! It’s rich, savory, and perfect for a lighter comfort food. The eggs added in create long ribbon-like strings that almost remind me of a noodle while providing added protein to the dish. I love me some spice and this dish has a really nice kick to it but feel free to add less or more depending on your preference.

Mediterranean Greek Salad with Spicy Greek Yogurt Dressing

I am obsessed with Noodles & Company Mediterranean Salad! It’s spicy and creamy plus it has noodles in the salad. I mean how can you go wrong with that. The greek yogurt dressing gives it some nice added protein but for even more top with sliced grilled chicken breasts. Prep this salad for the week for a healthy and light lunch. Spicy Thai Mushroom Lettuce Wraps

This light and easy recipe has nice savory nutty sauce with an added kick! Personally I love spice so I love to add in some extra chili garlic hot sauce. Have you ever had chili garlic hot sauce? It’s my go to hot sauce especially if I am cooking asian or thai food. The taste is similar to Sriracha but with more complex flavors. The spicy thai lettuce wraps are packed with veggies making it perfect for a light healthy lunch or appetizer.

Avocado & Egg Veggie Rice Bowl

Simple and healthy rice bowls that are great for meal prepping. Keep extra rice and veggies on hand in the fridge for a quick rice bowl and top it with a hard-boiled, scrambled or over easy egg for the added nutrition and protein.
