This easy and healthy recipe only takes 10 minutes or less to make. The creamy peanut free sauce tossed with the nutty and healthy Soba noodles make it the perfect ingredients to pair. Japanese Soba noodles which are made from buckwheat flour and wheat flour and have a slightly nutty, earthy taste. I love to use Soba noodles as they are so much more healthy than your average noodle. Soba is the Japanese name for buckwheat these noodles are higher in protein and fiber than many other noodles making them a much healthier option.
Spicy Peanut Free Soba Noodles
Equipment
- measuring cup

Ingredients
- 8-9 oz Soba noodles (cook according to the directions on the package)
- 1 green onion, thinly sliced
- 1 carrot, shredded
- sesame seeds
Peanut Free Sauce
- 1/2 cup 1/2 cup sunflower seed butter (optional substitute peanut or nut butter)
- 4 tbsp soy sauce
- 2 tbsp brown sugar
- 2 tbsp fresh lime juice
- 2 tbsp water
- 2 tbsp rice wine vinegar
- 1 tbsp freshly grated ginger
- 1 tbsp garlic cloves, minced
- 1 tbsp chili paste or flakes (optional)
Instructions
- Add all ingredients together in large bowl and mix well. If sauce is too thick add in more water to create a more creamy texture.
- Toss cooked Soba noodles into the sauce. Mix well and serve immediately or chilled. Top with sesame seeds, shredded carrots and green onions.
