Crispy Pancetta and Grilled Chicken Romaine Salad with Blue Cheese and Soft-Boiled Eggs

Grilled romaine lettuce is a delightful base for a salad, and when paired with crispy pancetta, grilled chicken, creamy blue cheese crumbles, cherry tomatoes, green onions, and a jammy soft-boiled egg, it creates a delicious and satisfying dish. Here's a simple recipe to help you prepare this mouthwatering salad.

Ingredients

  • 2 heads romaine lettuce cleaned and halved lengthwise
  • 4 slices pancetta or bacon
  • 2 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes halved
  • 4 green onions thinly sliced
  • 1/2 cup creamy blue cheese crumbles
  • 4 soft-boiled eggs

Instructions

  • Preheat your grill to medium-high heat.
  • Brush the cut sides of the romaine lettuce halves with olive oil and season with salt and pepper.
  • Grill the lettuce, cut side down, for 2-3 minutes or until it begins to char slightly. Flip and grill for another 1-2 minutes. Remove from the grill and set aside.

Crispy Pancetta

  • In a skillet over medium heat, cook the pancetta slices until they are crispy and browned. Remove them from the skillet and let them drain on paper towels. Once cooled, break them into smaller pieces.
  • Grilled Chicken
  • Season the chicken breasts with salt and pepper.
  • Grill the chicken on medium-high heat for about 6-7 minutes per side, or until they reach an internal temperature of 165°F (74°C) and have nice grill marks.
  • Remove the chicken from the grill and let it rest for a few minutes before slicing it into thin strips.

Soft-Boiled Eggs

  • Place the eggs in a saucepan and cover them with cold water.
  • Bring the water to a boil over medium-high heat. Once boiling, reduce the heat to a simmer and cook for 6-7 minutes for jammy eggs.
  • Immediately transfer the eggs to an ice bath to stop the cooking process. Once they are cool, peel and slice them in half.
  • Arrange the sliced grilled chicken, crispy pancetta, cherry tomatoes, green onions, and creamy blue cheese crumbles over the lettuce. Add the soft-boiled egg halves on top. Serve immediately.
