Ingredients

Crispy Tofu:

  • 1 block extra-firm tofu, pressed and cubed pressed and cubed
  • 2 tbsp cornstarch
  • 1 tbsp sesame oil (or neutral oil)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Sauce:

  • 1/4 cup sweet red chili sauce
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp freshly grated ginger
  • 1 tsp sesame seeds

Base:

  • 1 cup store-bought coconut jasmine rice (or regular jasmine rice)

Toppings & Add-Ins:

  • 1/2 cup ½ cup edamame steamed
  • 1/2 red bell pepper thinly sliced
  • 1/2 cucumber chopped
  • 1/4 cup panko breadcrumbs
  • 2 tbsp spicy mayo (mix 2 tbsp mayo with 1 tsp sriracha)
  • 1 tbsp sesame seeds (for garnish)
  • 1 green onion, sliced (optional)

Instructions

Step 1: Prepare the Crispy Tofu

  • Press the tofu to remove excess moisture, then cut into bite-sized cubes.
  • In a bowl, toss the tofu cubes with cornstarch, salt, and black pepper until evenly coated.
  • Heat sesame oil in a large skillet over medium-high heat. Add tofu cubes and cook for 3-4 minutes per side until golden and crispy.
  • Remove from heat and set aside.

Step 2: Make the Sauce

  • In a small bowl, whisk together sweet chili sauce, soy sauce, rice vinegar, grated ginger, and sesame seeds.
  • Pour the sauce over the crispy tofu, tossing to coat evenly.

Step 3: Assemble the Bowl

  • Prepare store-bought coconut jasmine rice (or regular jasmine rice) according to package instructions.
  • Divide the rice into serving bowls.
  • Arrange crispy tofu, edamame, red bell pepper, and cucumber on top.
  • Sprinkle with panko breadcrumbs and drizzle with spicy mayo.
  • Garnish with sesame seeds and sliced green onions.
