Ingredients

- 2 tbsp cornstarch
- 1 tbsp sesame oil (or neutral oil)
- 1/2 tsp salt
- 1/4 tsp black pepper
Sauce:
- 1/4 cup sweet red chili sauce
- 1 tbsp soy sauce
- 1 tsp rice vinegar
- 1 tsp freshly grated ginger
- 1 tsp sesame seeds
Base:
- 1 cup store-bought coconut jasmine rice (or regular jasmine rice)
Toppings & Add-Ins:
- 1/2 cup ½ cup edamame steamed
- 1/2 red bell pepper thinly sliced
- 1/2 cucumber chopped
- 1/4 cup panko breadcrumbs
- 2 tbsp spicy mayo (mix 2 tbsp mayo with 1 tsp sriracha)
- 1 tbsp sesame seeds (for garnish)
- 1 green onion, sliced (optional)
Instructions
Step 1: Prepare the Crispy Tofu
- Press the tofu to remove excess moisture, then cut into bite-sized cubes.
- In a bowl, toss the tofu cubes with cornstarch, salt, and black pepper until evenly coated.
- Heat sesame oil in a large skillet over medium-high heat. Add tofu cubes and cook for 3-4 minutes per side until golden and crispy.
- Remove from heat and set aside.
Step 2: Make the Sauce
