Asparagus Pea Spring Pasta Salad

Super light and fresh pasta salad tossed in vinegar & olive oil dressing with a little fresh lemon, garlic and red pepper flakes. I decided to use chickpea pasta noodles for added nutrition and protein you wouldn’t even notice the different from a regular pasta.

Easy Sourdough Croutons

Super easy to make sourdough croutons they are crunchy and just a little chewy. I love a good crouton that you can actually eat with a fork. These sourdough croutons are that perfect balance between chewy & crunchy that you can stab with your fork. It’s great to make a big batch and save these for salads & soups.

Easy Homemade Vegetable Broth

Literally the easiest thing to make. All you need is water and veggies brought to a boil and then simmered for 1 hour, strain the veggies to remove them and there you have it homemade vegetable broth. You can use any veggies you have on hand even the peels or pieces you would normally throw away. Typically vegetable broth is made with carrots, onions and celery but feel free to add in any fresh herbs, onion peels, garlic, leeks, green onions, mushrooms, potatoes etc.

Spicy Sausage & Spinach Soup

This 5 ingredient, one pot soup recipe is the most comforting soup for the cold winter days. This soup is inspired by a classic Italian wedding soup with my spin on it. It’s a super easy and quick recipe to make in a pinch. It’s spicy and has a creamy consistency from cooking the rice right in the soup.
