Cauliflower Fried Rice

The cauliflower fried rice is my go to healthy dish when I am feeling super lazy. Its packed with veggies and is so quick and easy to make. All you need is to buy frozen cauliflower rice, scramble some eggs and chop up a few veggies and mixed with homemade asian sauce. Then top it with sesame seeds for an added nutty crunch and hot chili oil. Hot chili is literally my favorite new obsession I can’t believe I had never had it before until recently. The flavor that is packed into the oil is remarkable and it gives your dish a subtle spicy heat.

Easy Homemade Vegetable Broth

Literally the easiest thing to make. All you need is water and veggies brought to a boil and then simmered for 1 hour, strain the veggies to remove them and there you have it homemade vegetable broth. You can use any veggies you have on hand even the peels or pieces you would normally throw away. Typically vegetable broth is made with carrots, onions and celery but feel free to add in any fresh herbs, onion peels, garlic, leeks, green onions, mushrooms, potatoes etc.

Easy Rotisserie Chicken Tacos Topped with a Radish Salsa

Looking for an impressive super easy and quick meal? Look no further! This super easy and quick taco dinner will be sure to win over whoever you make it for. The radish salsa and cotija cheese fancy up this simple dish making it look like it’s takeout or from a restaurant. The radish salsa has the prettiest pink hue to it and gives your taco that nice crunch packed with zesty cilantro-lime flavor. The homemade taco seasoning is something you can just whip up with basic ingredients you already have in your pantry (no more seasoning packets)! I love to make a big batch to keep the seasoning on hand.
